Mushroom Chattinad

Recipe Type: Indian                                               Yield: 4
Preparation Time: 10 mins                                    Cooking Time: 25 mins

Ingredients:
400g mushrooms
1/4 cup of chopped coriander leaves
1 tomato
1 red onion
1/2 cup grated coconut
1/2 tsp of chopped ginger
3 garlic cloves
1/4 cinnamon powder (or cinnamon stick)
4 peppercorns
1/2 tsp of cumin seeds
1 tsp of coriander seeds
2 cloves
1/4 tsp chilly powder
1/4 tsp of turmeric powder
1/2 tsp of salt
1/2 cup of water
2 tsp of oil
1/2 tsp of mustard seeds
5 curry leaves
4 Byadagi chilies

Method:
1. Dry roast for 2 mins: Byadagi chilies, peppercorns, grated coconut, garlic cloves, ginger, cloves, cinnamon powder (or cinnamon stick), cumin seeds, coriander seeds, and turmeric powder.
2. Grind all dry roasted ingredients with some water. Grind it coarsely.
3. Heat a nonstick pan. Add oil, mustard seeds and curry leaves for tempering.


4. Add chopped onion. Fry till it becomes transparent.


5. Now add chopped tomato. Fry for 2 mins.


6. Pour ground masala, 1/4 cup of water, chilly powder and salt. Fry for 4 mins.


7. Add chopped mushrooms. Cook for 15 mins. 
8. Finally garnish with coriander leaves.
