Ingredients:
1 cup of grated coconut
5 Byadagi chilies
1/2 tsp of mustard seeds
3 tsp of coconut oil
2 green chilies
2 tsp of chopped ginger
3 cups of chopped veggies (carrot, beans, long beans, corn, potato, tindora, bell pepper, pointed gourd, suran, ridge gourd)
4 cups of water
1 tsp of salt
1/4 tsp of tamarind paste
3 tsp of black lentil
10 curry leaves
Method:
1. Dry roast black lentil for 2 mins.
2. Grind grated coconut, Byadagi chilies, tamarind paste, dry roasted black lentil, and with little water. Make a fine paste.
3. Heat a sauce pan. Add oil and curry leaves for tempering.
4. Now add water, ground masala and salt. Cook for 5 mins.
5. Add chopped veggies and mix well. Cook for 20 more mins.
6. Finally add chopped ginger and slit opened green chilies. Mix well. Switch off gas.
