Bottle gourd-Moong dal Paysam/Gharduddi-Moong dal Payasam




Recipe Type : Indian                                                                                      Yield : 4
Preparation Time : 15 mins                                                                           Cooking Time : 25 mins


Ingredients:
2 cups peeled and chopped bottle gourd
3/4 cup jaggery
1 tbsp rice flour
1/2 cup grated coconut
1 tsp cardamom powder
3 cups water
1/2 cup moong dal
6 cashew nuts
6 raisins
1 tbsp ghee/clarified butter

Method :
1. In a pressure cooker add peeled and chopped bottle gourd, water and moong dal. Cook for 1 whistle. Keep aside.
2. Grind grated coconut, adding little water.
3. Heat a sauce pan. Add clarified butter, cashew nuts and raisins. Fry for few seconds.
4. Now add cooked bottle gourd and moong dal from step 1. Mix well.
5. Pour ground coconut paste and water. Add jaggery and rice flour. Mix well. Cook for 6 mins.
6. Finally add cardamom powder. Bring to boil. Switch off flame.

Nankhatai (wheat flour nankhatai)




Recipe Type : Indian                                                                               Yield : 
Preparation Time : 15 mins                                                                    Baking Time : 20 mins


Ingredients :
1/2 cup + 3 tbsp clarified butter
1 and 1/2 cup wheat flour
4 tbsp chickpea flour
1 cup powdered sugar
1/2 cup crushed nuts (almond, cashew, pistachios)
1 tsp baking soda
3/4 tsp cardamom powder

Method:
1. In a bowl add all ingredients except clarified butter. Mix well.
2. Now add clarified butter. Mix well.



3. Preheat oven for 350 degree F.
4. Now prepare round balls from the mixture. Press each ball a bit, to flatten them.
5. Place aluminum foil on a tray. Place these flattened dough balls on it.


6. Once oven reaches 350 degree F, place the tray in oven and bake for 20 minutes.


7. After baking switch off oven. Allow to cool for 10 mins.

Banana Halwa/Nendrabale halwa




Recipe Type : Indian                                                                              Yield : 15 pieces
Preparation Time : 10 mins                                                                    Cooking Time : 40 mins


Ingredients:
1 cup jaggery
2 tbsp water
6 nendraballe/plantains (peeled and ground)
3 tbsp clarified butter
1/2 tsp cardamom powder.

Method:
1. Heat a nonstick pan containing water.
2. Add jaggery. Mix well.



3. Once jaggery melts, add ground plantains. Mix well.


4. Pour clarified butter. Continuously mix well.


5. Once it forms a lump, put it on a plate smeared with clarified butter. Spread it.
6. Once it is at room temperature cut into pieces.

Dilkhush




Recipe Type : Indian.                                                                              Yield : 18 pieces                                                                                                          
Preparation Time10 minutes                                                                Cook Time25 minutes

Ingredients:
1 cup of grated coconut
half cup of sugar
half cup of tutti frutti
2 puff pastry sheets
1 unsalted butter stick (melted)
all-purpose flour

Method:
1. Sprinkle some flour on counter top.
2. Place a puff pastry sheet.




3. In a bowl mix all of the above ingredients, except butter.
4. Now spread the mixture on a puff pastry sheet.


5. Now take another puff pastry sheet and cover it.
6. Apply butter on top.
7. Preheat the oven at 400 degree F.
8. Cut into rectangular shapes or any other desired shapes.


9. Place an aluminum foil on a baking tray. Place unbaked dilkhush.


 10. Bake for 25 mins or till it turns golden brown in color.

No bake coconut cookie cake








Yield : 6

Preparation Time : 10 mins                                                        Refrigerate Time : 6 hours

Ingredients :
25 coconut cookies
473 ml heavy whipping cream
3 tbsp powdered sugar (as required)
1/2 tsp vanilla essence
1 tbsp tutti-fruitti

Method : 
1. In a bowl add heavy whipping cream, vanilla essence and powdered sugar. Using a hand mixer whip the cream for 8 mins or until it fully whipped.
2. In a glass bowl add 2 tbsp whipped cream.
3. Next place a layer of cookies. On top of cookie layer put whipped cream.






4. Repeat third step again. Now put tutti-fruitti for garnishing. Cover with lid.


5. Place this in refrigerator for at least 6 hours.

Sukhdi/Gur Papdi/Gol Papdi




Recipe Type : Indian                                                                                Yield : 20 pieces
Preparation Time : 10 mins                                                                     Cooking Time : 25 mins


Ingredients:
2 cups wheat flour
1 cup clarified butter/ghee
1 cup jaggery powder
1 tsp cardamom powder
2 tbsp sliced almond

Method :
1. Heat a thick bottom pan. Add clarified butter.
2. Once clarified butter melts, add wheat flour. Mix well.



 3. Cook on a low flame. Stir until wheat flour gives aroma and turns light brown color.


4. Once wheat flour tuns to light brown color, switch off flame.


5. Add jaggery powder and cardamom powder. Mix well.


6. In a greased tray, put this mixture and flatten it.


7. Cut into required shapes.


8. Garnish with sliced almonds.

Green gram-Rice Sweet Khichidi/ Sweet Pongal




Recipe Type : Indian                                                                   Yield : 5
Preparation Time : 10 mins                                                        Cooking Time : 35 mins


Ingredients :
1/4 cup rice
1/2 cup green gram
water
1/2 tsp cardamom powder
10 cashew nuts
10 raisins
2 cups jaggery
1/2 cup grated coconut
1/4 cup clarified butter

Method :
1. In a cooker add rice and green gram. Pour required amount of water. Cook for 4 whistles. Keep aside.
2. In a pan add clarified butter, cashew nuts and raisins. Fry for few seconds.
3. Heat a thick bottom pan. Pour 1/2 cup of water and add jaggery.
4. Once jaggery melts, add cooked rice and cooked green gram.
5. Add grated coconut, 1 cup of water, remaining clarified butter, fried cashew nuts and raisins.
6. Sprinkle cardamom powder and mix well.
7. Once khichidi gets thicker, switch off gas.

Chocolate cookies/ Chocolate nankatai



Yield : Count of 20            
Preparation Time : 10 mins                                                    Baking Time : 13 mins

Ingredients :
3/4 cup + 2tbsp  all-purpose flour
1 tbsp cocoa powder
1/2 cup clarified butter
1/2 cup sugar powder
pinch of nutmeg powder
1/4 tsp cardamom powder
3 tbsp chopped cashew nuts and almonds
1/2 tsp baking soda


Method:
1. In a bowl add all-purpose flour, cocoa powder, sugar powder, nutmeg, baking soda and cardamom powder. Mix well.
2. To the same bowl add remaining ingredients and mix well.
3. Prepare 20 balls from the dough.
4. Gently press each ball.
5. Preheat oven for 350°F.
6. Place the lightly flattened dough on the baking pan.


7. Bake for 13 minutes.

Eggless fruit cake/Eggless plum cake




Recipe Type : Indian                                                                     Yield : 8 slices
Preparation Time : 20 mins                                                          Baking Time : 55 mins

Ingredients :
1 and 1/4 cup all-purpose flour
1/2 cup butter
3/4 cup sugar
1 cup tutti-frutti
1/2 cup dry fruits (roasted chopped almond and cashew nuts)
1 cup orange juice
3 tbsp yogurt
1/2 tsp baking powder
1/4 tsp baking soda
1 tsp orange zest
1/4 tsp cloves powder
1/4 tsp cinnamon powder
1/4 tsp nutmeg powder
pinch of salt

Method :
1. Soak tutti-frutti in orange juice overnight.


2. Sieve juice from the tutti-frutti. Save that juice for later use.
3. In a bowl add 1 cup of all-purpose flour, salt, baking powder, baking soda, salt, sugar, cinnamon powder, and nutmeg powder. Mix well.
4. In a another bowl add butter, orange zest, and yogurt. Mix well.


5. Now take one more big bowl. To this bowl add overnight soaked tutti-frutti.
6. Add remaining flour to tutti-frutti mixture. Fold to coat every tutti-frutti.


7. Now to the tutti-frutti bowl add contents from bowl mentioned in point 3, and roasted dry fruits. Fold it well.


8. Add 1/4 cup of saved orange juice. Mix well. Cake batter is ready.


9. Preheat an oven to 350°F.
10. Grease the pan with butter. Place the butter paper.
11. Pour batter to the cake baking pan.



12. Bake for 55 mins or until an inserted toothpick comes out clean.

Dilkhush






Recipe Type : Indian                                                                             
Preparation Time : 20 mins                                                                      Cooking Time : 40 mins

Ingredients :
1 and half cups grated coconut
1 and half cups tutti frutti
3/4 cup sugar
1/2 cup butter
20 phyllo pastry sheets

Method :
1. In a bowl add sugar, grated coconut and tutti frutti.
2. Apply butter to 9"x13" pan.


3. Start layering using phyllo pastry sheet and applying butter. Repeat this step with 9 more sheets.




4. Spread the tutti-frutti mixture.


5. Layer 10 more phyllo pastry sheets on top, each time applying butter.


6. Using sharp knife cut into square shapes or diamond shapes.


7. Preheat an oven for 350 degree F.
8. Bake for 40 mins.
