Ingredients:
For Pulav
3/4 cup of basmati rice (soaked in warm water for 15 mins)
11/2 cup go water
3/4 tsp of salt
1 cups of mixed vegetables (corn, carrot, beans, soya beans, peas)
10 cauliflower florets
1 bell pepper
4 garlic cloves
1 green chilly
1/2 cup of chopped coriander leaves
1 inch of ginger
1 tomato
2 tsp of clarified butter (ghee)
1 onion
2 cloves
1 anise
1 bay leaf
1/2 inch of cinnamon stick
For Raitha
1 baby cucumber
1 tomato
1/4 tsp of chopped green chilly
1/4 tsp of salt
1 1/2 cup of buttermilk
1 tsp of chopped coriander leaves
Method:
Pulav Recipe:
For grinding: Grind coriander leaves, ginger, garlic, tomato and green chilly. Make a fine paste.
1. Heat a nonstick pan. Add clarified butter, cloves, cinnamon stick, anise and bay leaf. Fry for 2 mins.
2. Now add chopped onion. Fry till it becomes transparent.
3. Add ground masala. Fry for 6 mins.
4. Add all veggies and salt. Mix well.
5. Put the soaked basmati rice. Stir it once. Fry for 2 mins.
6. Pour water. Mix well. Allow to cook the rice. Serve it with raitha.
Raitha Recipe:
In a bowl add chopped baby cucumber, chopped tomato, salt, chopped coriander leaves, chopped green chilly and buttermilk. Mix well.
