Hakka Noodles

Yield: 4
Preparation Time: 10 mins         Cooking Time: 15 to 20 mins

Ingredients:

1/2 cup of Onion slices
1/2 cup of diced cabbage
1/2 cup of bell pepper strips
1/2 cup of carrot strips
(you can use other vegetables like snow peas, broccoli, baby bok choy and sprouted green gram)
1 tsp of soys sauce
1 tsp of vinegar
1 tsp of salt
1 pack of Noodles
1 tbsp oil

Method:

Noodles cooking method:

1. Heat a sauce pan adding water.
2. As water reaches it's boiling point add noodles and salt. Cook for 3-4 mins.
3. Cook for 3/4 only.
4. Strain the water from noodles. Now transfer this cooked noodle into cold water so it won't stick to each other.

Hakka noodles preparation rest of the method:

1. Heat a nonstick pan. Add 1tbsp of oil.
2. Now put sliced onion, carrot and cabbage fry for 3 mins in a high flame.
3. Now add broccoli, snow peas, bok choy, bell pepper fry for another 2 mins.
4. Strain the noodles. Put them into a pan. Now add salt, vinegar, and soy sauce. Mix well.
