Preparation Time : 10 mins Cooking Time : 3 mins each
Ingredients :
1 and 1/4 cups of semolina
1 cup curd
1 cup water (as required)
salt
1 cup vegetables (grated or chopped carrot, finely chopped beans, and peas)
1/2 tsp grated ginger
1 chopped green chilly
pinch of baking soda
2 tbsp chopped coriander leaves
1/2 tsp mustard seeds
1 tsp chanadal/split chickpeas
6 curry leaves
2 tbsp clarified butter or oil
Method :
1. Heat a pan. Add little clarified butter. Put mustard seeds, chanadal, and curry leaves.
2. Add semolina. Fry for 5 mins on low flame. Switch off heat.
3. Once semolina comes to room temperature, add water, curd, salt, baking soda, grated ginger, coriander leaves, chopped green chilly and vegetables. Mix well. Keep it aside for 20 mins.
4. Prepare medium consistency batter.
5. Heat a griddle. Sprinkle little oil or clarified butter.
6. Pour batter on griddle. Spread little bit. Cover pan with a lid.
7. Cook on a low flame. Cook uttapam on both sides.
8. Serve with chutney or curry.
