Ingredients :
1 cup basmati rice (soaked for 20 mins)
2 and 1/4 cups water
1 cup mixed vegetables (beans, peas, carrot, corn)
2 green chilies
2 tbsp chayote/seemebadane
2 anise
2 big cardamoms
1 small cinnamon stick
1/2 tsp black cumin seeds
1/2 tsp cumin seeds
2 tbsp coriander leaves
2 tbsp clarified butter
1/4 tsp garam masala
Method :
1. Heat a pan. Put clarified butter. Add cumin seeds, black cumin seeds, cinnamon stick, anise, slit opened green chilies and black cardamom.
2. Now add chopped vegetables and coriander leaves.
3. Add salt, and garam masala. Mix well.
4. Pour 1/4 cup of water. Cook for 5 mins.
5. Add soaked basmati rice and pour remaining water.
6. Cook rice until done.
Raita
In a bowl add half cup of chopped cucumber, coriander leaves, 1 chopped tomato, 1 green chilly, salt, 1/2 tsp chaat masala and 1/4 tsp red chilly powder. Mix well.
