Spicy Mushroom Green Masala / Sukka

Preparation Time : 15 mins                                                            Cooking Time : 20 mins

Method : 
300g mushrooms
1 onion
1 tomato
1 tbsp clarified butter
1 tbsp oil
7 curry leaves
3/4 tsp mustard seeds
1 tsp salt

Green masala:
3 green chilies
half a bunch of coriander leaves
2 tbsp grated coconut
1 inch ginger
2 garlic cloves
2 tbsp water
Grind coarsely and keep aside.

For dry masala
1 tsp fennel seeds
1/2 tsp black cumin seeds
1 tsp cumin seeds
3 tsp coriander seeds
5 black peppercorns
1 anise
1 cardamom
2 cloves
1/4 tsp fenugreek seeds
1/4 tsp turmeric powder
1/2 tsp chilly powder
1 tsp black lentils
1 tsp bengal gram

Dry-roast each of ingredients separately. Now mix the ingredients and make powder. Use only 1 table spoon of the masala for this recipe. Save rest of the dry masala for future use.


Method :
1. Heat a pan containing oil and clarified butter.
2. For tempering add mustard seeds and curry leaves.


3. Now add chopped onion. Fry till translucent.


4. Put chopped tomato. Fry for 3 mins.


5. Now add 1 tbsp dry masala. Sauté for 30 seconds.


6. Put green masala and sauté until raw garlic smell is done.


7. Add salt, chopped mushrooms and 2 tbsp of water. Close pan with a lid. Cook until mushrooms are done.


8. Serve with Indian pancakes (dosa) or rice or Indian bread(naan/roti) or idli.
