Puri/ Poori and Aamras


Recipe Type : Indian                                                              Yield: 4
Preparation Time : 10 mins                                                   Cooking Time : 15 mins

Ingredients:
3 cups wheat flour
1 tbsp fine semolina
2 tsp sugar
1 tsp salt
1/2 cup water (as required)
1 cup oil
1 cup mango pulp
1/4 tsp cardamom powder

Method:
1. In a bowl add wheat flour, fine semolina, salt, 2 tsp oil and 2 tsp sugar. Mix well.
2. Pour 1/2 cup of water (or as required) to the wheat flour mixture and mix well. Prepare hard dough; don't add more water. Keep this dough aside for 10 mins.
3. Make small balls from this dough.


4. Using rolling pin flatten the balls into 3" rounds (and approx 0.1" thickness) on an oiled board (don't apply flour).

 

5. Heat a thick bottom frying pan. Pour oil and wait until the oil is hot (not boiling hot).
6. Fry the puri one at a time. Drown the puri into oil once, so that it puffs up. Fry on both sides.



7. Serve hot puris with aamras or bhaji.




Aamras



Ingredients 
2 tsp sugar
1 cup mango pulp
1/4 tsp cardamom powder

Method:
In a bowl pour mango pulp, sugar and cardamom powder. Mix well.
