Carrot -Tomato- Summer Squash Soup


                                                                      Yield : 4
Preparation Time : 10 mins                                                    Cooking Time : 25 mins

Ingredients:
1 carrot
1 summer squash
1 tomato
1/4 tsp oregano
1/4 tsp thyme
5 black peppercorns
1 tsp salt
1 tsp cumin seeds
1 tbsp butter
3 cups water
1/2 cup cream (optional)

Method:
1. Heat a sauce pan. Add 3 cups of water and salt. Add carrot, tomato, and summer squash. Cook for 15 mins. Allow to cool down. Sieve and keep liquid aside.
2. In a blender add all cooked vegetables. Make a fine paste. Sieve it.
3. Heat a pan. Add cumin seeds, black peppercorns, thyme, and oregano. Dry roast for 1 min.
4. In a blender add all dry fried ingredients. Make a fine powder.
5. Heat a sauce pan. Add ground powder, vegetable puree, cream (optional), butter, salt, and liquid from Step 1. Bring to boil.
