Upma / Uppitu / Rulav

Preparation Time : 10 mins                                                           Cooking Time : 20 mins

Ingredients :
1 cup semolina (sooji)
1 tbsp chopped red bell pepper
1 tbsp chopped green bell pepper
1 tomato
1 tbsp chopped onion (optional)
1 green chilly
1 tsp chopped ginger
2 cups water
5 small cauliflower florets
1 tbsp grated carrot
1 tbsp clarified butter (ghee)
1 tsp mustard seeds
6 curry leaves
2 tbsp split bengal gram (chana dal)
1 tbsp black lentils (urad dal)
1 tbsp green peas
1 tbsp chopped coriander leaves
1 tsp salt
2 tsp sugar
5 cashew nuts

Method:
1. Heat a sauce pan containing 2 cups of water. Add salt, sugar, ginger, green peas, chopped tomato, cauliflower, grated carrot, chopped onion (optional), red and green bell peppers. Bring to boil.
2. Heat another pan. Pour ghee. Now add mustard seeds, split bengal gram, black lentils, chopped green chilly and curry leaves for tempering.
3. Now add semolina and cashew nuts. Fry till it becomes golden color.
4. Pour hot water containing vegetables. (Be careful while pouring hot water.)
5. Once water dries of, garnish with coriander leaves.
