Mixed Veggie Sauté




Recipe Type : Indian                                                                               Yield : 2
Preparation Time : 10 mins                                                                    Cooking Time : 20 mins


Ingredients :
1 carrot
10 beans
1 potato
2 tsp oil
1 tsp chanadal
1 tsp urad dal
1/4 tsp mustard seeds
salt
1/4 tsp cumin seeds
1/4 tsp turmeric powder
1/2 tsp chilly powder
5 curry leaves
pinch of asafoetida
water

Method : 
1. Heat a pan. Add oil, mustard seeds, cumin seeds, chanadal, urad dal, asafoetida and curry leaves for tempering.
2. Now add chopped veggies. Pour water. Add salt, chilly powder, and turmeric powder. Mix well.
3. Cover pan with a lid and cook until it's done. Serve with rice or Indian roti.

Cluster beans-Peanut Saute/Sabji

Preparation Time : 10 mins                                                            Cooking Time : 25 mins

Ingredients :
300g cluster beans
1/2 cup fresh peanuts (outer shells removed)
water
salt
1/4 tsp mustard seeds
5 curry leaves
2 tsp jaggery powder (as required)
1/2 tsp chilly powder
1 tsp chanadal
2 tsp oil

Method:
1. In a pressure cooker add chopped cluster beans, peanuts and water. Cook for 2 whistles.
2. Heat a pan. Add oil, mustard seeds, chanadal and curry leaves.
3. Now add cooked cluster beans and peanuts.
4. Sprinkle salt, chilly powder and jaggery powder. Saute for 5 mins.
5. Serve with rice or Indian roti.

Eggplant-carrot-Bell pepper Sabji

Preparation Time : 10 mins                                                         Cooking Time : 20 mins


Ingredients : 
4 green eggplants
1 carrot
1 bell pepper
1 tomato
salt
2 tsp oil
1/4 tsp asafoetida
1/2 tsp mustard seeds
5 curry leaves
1/2 tsp chilly powder
1/4 tsp turmeric powder
water


Method :
1. Heat a pan. Add oil, mustard seeds, asafoetida and curry leaves for tempering.
2. Now add chopped all veggies, water salt and remaining ingredients. Cover pan with a lid. Cook unit it's done.
3. Serve with rice or Indian roti.

Idli Manchurian




Recipe Type : Indian                                                            Yield : 2
Preparation Time : 20 mins                                                 Cooking Time : 40 mins

Ingredients:
4 idli
1 bell pepper
4 cherry tomatoes
1 onion
2 garlic cloves
2 tsp ginger
2 green chilies
3 tbsp coriander leaves
1/2 tsp chilly powder
3 tbsp rice flour
3 tbsp corn flour
2 tbsp all-purpose flour
salt
5 tbsp tomato ketchup
1 tsp soya sauce
3 tsp vinegar
oil for frying

Method :
1. In a bowl add rice flour, all-purpose flour, corn flour, salt, chilly powder and water. Mix well. Prepare a thick batter.
2. Heat a pan containing oil.
3. Cut idli into small pieces. Now dip idli pieces into the batter and deep fry. Keep aside.





4. Heat a pan. Add 2 tsp oil, chopped onion, cherry tomatoes, ginger, garlic, slit opened green chilies and bell pepper. Fry for 5 mins.


5. Now add tomato ketchup, soya sauce, salt and vinegar. Mix well.
6. Put deep fried idli pieces. Mix well. Cook for 3 mins.





7. Garnish with coriander leaves.

Green gram-Moong dal-Rice Pancakes

Preparation Time : 10 mins           Fermentation Time : 2 hrs              Cooking Time : 3 mins each

Ingredients :
1/4 cup moong dal
1/2 cup green gram
1 cup rice
salt
water
oil for frying

Method :
1. In a bowl add moong dal, rice and green gram. Soak in water for 5 hours.
2. Now wash the bowl contents, removing extra water. Grind to fine paste (add water while grinding as required).
3. Pour batter into the bowl. Ferment for 2 hours. After fermentation add salt to the batter. Mix well.
4. Heat a pan. Sprinkle little oil. Pour one ladle of batter. Spread it. Cover pan with a lid. Cook pancakes on both the sides.
5. Serve with curry or chutney.

Moong dal-Cracked wheat Upma

Ingredients :
1/2 cup moong dal
1/4 cup cracked wheat (lapsi)
1 cup mixed vegetables (carrot, corn, peas and beans)
salt
2 green chilies
1 tsp grated ginger
1 and 1/2 cups water (as needed)
2 tsp oil
1 tsp cumin seeds
pinch of asafoetida (hing)
2 tbsp chopped coriander leaves

Method :
1. Heat a pan. Add little oil. Put cumin seeds, slit opened green chilies and asafoetida.
2. Now add vegetables. Fry for 5 mins.
3. Put washed moong dal and cracked wheat.
4. Add salt, grated ginger and water. Mix well. Cook until it's done.
5. Garnish with coriander leaves.
