Veggies Suka sabji

Preparation Time : 10 mins                                                              Cooking Time ; 20 mins

Ingredients :
1 cup mixed vegetables (peas, carrot, beans, corn)
2 tbsp chopped coriander leaves
10 cauliflower florets
1 bell pepper
1 cup zucchini
1 big tomato
1 potato
2 green chilies
water
salt
1/4 tsp turmeric powder
1/2 tsp kasuri methi/dried fenugreek leaves
1 tsp chilly powder
1/2 tsp fennel seeds
1/4 tsp garam masala
1/2 tsp cumin seeds
1/2 tsp ginger
2 tbsp clarified butter or oil

Method :
1. In a mixer jar add chopped tomato and ginger. Prepare it's puree.
2. Heat a pan. Add clarified butter, cumin seeds, fennel seeds and slit opened green chilies. Sauté for few seconds.
3. Pour tomato puree. Fry for 2 mins.
4. Sprinkle dry ingredients and kasuri methi. Mix well.
5. Now add all veggies. Stir it.
6. Pour water as much need for cooking and for gravy. Cook until it's done.
7. Garnish with coriander leaves.
8. Serve with rice item or Indian bread.
