Melbar Spinach and black-eyed peas Curry/Koddel




Recipe Type: Indian                                                               Yield: 4
Preparation Time: 15 mins                                                    Cooking Time: 25 mins

Ingredients:
1 cup of grated coconut
4 byadagi chilies
4 crushed garlic cloves
2 tsp of oil
1 bunch of Malabar spinach
2 tsp of salt
5 cups of water
1/4 tsp of tamarind paste
1/2 cup black-eyed peas

Method: 
1. Grind grated coconut, Byadagi chilies, tamarind paste and with 1/2 cup of water. Make a fine paste.
2. Heat a sauce pan. Add oil, and crushed garlic cloves. Cook for 2 mins.
3. In a pressure cooker add half cup black-eyed peas, 1/2 tsp salt and 1 cup water. Take out 2 whistles.
4. Now add chopped Malabar spinach leaves and 2 cups of water. Cook for 15 mins.
5. Add ground masala, 2 cups of water and salt. Mix well. Cook for 10 more minutes.

Mint-Methi Pulav

Preparation Time : 10 mins                                                          Cooking Time : 20 mins

Ingredients:
1 tsp cumin powder
1 tsp coriander powder
1 green chilly
2 tomatoes
2 cups cooked basmati rice or white rice
1 cup mint leaves
1 cup fenugreek leaves/ methi 
2 tbsp clarified butter
2 black cardamoms 
3 cloves
2 bay leaves
1 anise 
5 black peppercorns 
coriander leaves
salt to taste
1 tsp cumin seeds
1/4 tsp turmeric powder

Method:
1. Heat a pan. Add clarified butter, black cardamom, cumin seeds, cloves, anise, bay leaves, black peppercorns and slit opened green chilly. Fry for 5 seconds.
2. Put chopped tomatoes. Fry for 3 mins.
3. Now add coriander, salt, cumin powder, and turmeric powder. Fry for few seconds.
4. Add washed and chopped mint and fenugreek leaves. Cook for few seconds.
5. Put cooked rice, mix gently. Close the pan lid and cook for few minutes.
6. Garnish with coriander leaves.

Vegetable Rice Noodles




Recipe Type : Indian                                                                      Yield : 2
Preparation Time : 10 mins                                                           Cooking Time : 25 mins
       
Ingredients :
2 cups rice noodles
1 green chilly
1 cup mixed vegetables (carrot, cauliflower, peas, bell pepper and beans)
salt 
1/4 tsp turmeric powder
1 tsp sugar
1 onion
1/2 tsp mustard seeds
6 curry leaves
coriander leaves
water (to cook noodles)
1 tbsp oil/ clarified butter

Method : 
1. Heat a pot containing water. Bring to boil.
2. Add rice noodles. Cook for 3 minutes.
3. Sieve to remove water. Now poor cold water to stop cooking process. Sieve it again.
4. Heat a pan. Pour little oil or clarified butter.
5. Put some mustard seeds, curry leaves and slit opened green chilly. Fry for few seconds.
6. Now add chopped onion. Fry till it is transparent.
7. Put all vegetables. Fry for few minutes.
8. Add turmeric powder, salt, and sugar. Mix well. Now add cooked and drained rice noodles.
9. Mix gently. Garnish with coriander leaves.

Indian Soft Tacos



Recipe Type : Indian                                                                      Yield : 2
Preparation Time : 20 mins                                                           Cooking Time : 25 mins
     
Ingredients:
1 cup rice flour
salt
1 bell pepper
10 broccoli florets
2 tbsp sour cream
1 chopped bell pepper
2 tbsp tomato ketchup
6 lettuce leaves
2 tbsp yellow mustard paste
2 tbsp sweet chilly sauce
4 mushrooms
1/4 cup chopped cucumber
coriander leaves
100g cottage cheese (paneer)
4 tbsp curd
4 tbsp butter
1 tsp chilly powder
1/2 tsp turmeric powder
1/4 tsp garam masala
2 tsp ginger-garlic paste
water

Method:
Paneer marination:
In a bowl add all ingredients (paneer chopped into square shapes, curd, chilly powder, turmeric powder, garam masala, ginger-garlic paste). Marinate for 15 mins.

 Heat a nonstick pan. Put 1tbsp of butter. Now add marinated paneer and cook on both sides.




For soft rice tacos
1. In a bowl add rice flour, little salt, and water.
2. Prepare a dough.
3. Divide dough into equal size balls.
4. Using rolling pin flatten a dough ball into a round shape.
5. Heat a griddle. Sprinkle little butter. Add uncooked soft taco and cook on both sides.

Vegetable pan fry:
Pan fry all vegetables for 3 mins. Sprinkle little salt.


Arrangement of taco:
First place soft rice taco on a plate. On top of that place lettuce leaf, followed by cooked paneer, all vegetables, sour cream, tomato ketchup, sweet chilly sauce and yellow mustard paste.
Garnish with coriander leaves.
